Worked example
350 °F is 176.67 °C exactly, which every cookbook prints as 180 °C — the dial rounding is 3.33 °C and no oven holds a temperature that closely anyway. It is gas mark 4, and 160 °C in a fan oven.
How to work it out yourself
- 1.Convert with (°F − 32) × 5/9, then round to the nearest ten: recipes are written to the marks a dial actually has, not to the arithmetic.
- 2.For a fan or convection oven, drop 20 °C — about 36 °F. Moving air transfers heat faster, so the food cooks as if the oven were hotter than the setting.
- 3.Gas marks step 25 °F each, starting at mark 1 = 275 °F. Mark 4 is the 350 °F that most US baking recipes assume.
- 4.Check the oven against a thermometer before blaming the recipe. Domestic ovens commonly run 25 °F off their dials, which is a whole gas mark.

- What is 350 °F in Celsius for an oven?
- 176.67 °C exactly, and every recipe prints it as 180 °C because that is the mark a metric dial actually has. The 3.33 °C of rounding is smaller than the error of any domestic oven, which is why nobody has ever noticed it.
- What gas mark is 180 °C?
- Gas mark 4. The scale runs 25 °F a mark from mark 1 at 275 °F, so mark 4 is 350 °F, which is the 180 °C a metric recipe means. Below mark 1 the marks halve: ½ is 250 °F and ¼ is 225 °F.
- How much do I reduce a fan oven by?
- 20 °C, or about 36 °F. A convection fan moves air across the food, so heat transfers faster than in a still oven and the food behaves as if the setting were 20 °C higher. Some manufacturers also shorten the time by about 10%.
- Why does my baking come out wrong at the right temperature?
- Because the dial is not a measurement. Domestic ovens routinely sit 25 °F either side of their setting, drift as the element cycles, and run hotter at the top. An oven thermometer costs less than the ingredients in one failed bake, and it is the only way to know which oven you actually have.
