Grams of Sugar to Cups

How many cups a weight of granulated sugar makes. Unlike flour, the answer does not move with how the cup was filled, and this page shows why that is.

Sugar is the useful contrast to flour: 198 g a cup however it was filled, because the grains are hard and already sit as close together as they will go. Pressing a cup of sugar achieves nothing at all.

What about brown sugar?

A different figure, and the one sugar where packing is the whole point: 213 g a cup packed, which is what a recipe means when it says a cup of brown sugar. Loose, it is nearer 145. Granulated is the stable one; brown is emphatically not.

And powdered sugar?

About 120 g a cup unsifted and roughly 100 sifted — a twenty per cent spread, because the particles are fine enough to hold air between them. Weighing is worth the trouble in an icing, where the ratio to the liquid decides whether it sets.
